A Note from the Founder



Today marks nine months since the beginning of Miette. This venture has come a long way since its humble beginnings and has quickly grown into a small business of its own. A true labor of love, I am thrilled to tell you about the newest chapter in Miette’s growth journey.

Since its founding, the mission was simple and has never strayed: to demonstrate bread making as a thoughtful expression of craft and philosophy of ingredients. Our relationship to food and its source is quite complicated, characterized by a great disconnect. Ingredients we can’t pronounce have found their way into our diets for the sake of shelf life. Much of our food system depends on our not knowing much about it. But what if we could eat every meal knowing these few simple things: What it is we’re eating. Where it came from. How it found its way to our table. Driven by a passion to consciously answer these questions with each meal, I envisioned creating an exchange that brought us back to a simpler time. When flour, water, salt, and one baker up at dawn were the only ingredients in our bread.

Because Miette began with a philosophy of ingredients, each loaf is an opportunity to explore the craft and ask questions. I am constantly challenging myself to seek new ways to approach things differently. As a baker and business owner, I have dedicated my career not only to creating a craft around the art of food, but the craft of bringing people together around a meal. Of course, these are unprecedented times in all of our lives where being around community needs to be at a minimum. But therein lies the opportunity to adapt and bring the community to your tables.

Miette, we’re reevaluating priorities, adjusting to new realities, and doing it all while sheltering in place.
